New Years Treats

Our yearly tradition of Chinese take out in our jammies will prevail this year except for one thing......the addition of eating these cookie balls while drinking champagne and sparkling juice when we watch the ball drop.



I am so glad that I took a hiatus during the holidays from losing a few pounds, cause these cookie treats are so stinkin delish. Crowd favorite, they look pretty and are super easy to make.

It's a show where random people with varying degrees of skill, bake yummy things in a pretend kitchen, with limited time and get judged by a panel who decide their fate. Yikes.

The Easiest Holiday Cookie Ever!

Have a got a treat for you today...well more like 34 of them, and a secret on how to create the easiest holiday cookie ever.



What's not a secret is that I don't like to spend a whole lot of time cooking and baking, especially during the holidays.  So I turn to my 'pretend I was in the kitchen all day baking' cookies. I know, funny but boy are they good.

I will never forget the first Christmas that I spent away from my family with my then boyfriend, who would later become my husband, and his family in Lafayette, Louisiana. And as I was missing my family and our own family traditions, I was creating new ones as the entire gang of them , the siblings, spouses and 20 kids, made sure to make me feel welcomed and loved while we laughed hearing family stories, played games and....drank cocoa.

Stepping Up My Cooking Game..... A Holiday Snack

If you follow my blog regularly, you know I have professed my less then marginal skills and desire to be in the kitchen. Sure I have the basic's down for feeding the kids and packing school lunches, but my husband gets all the cooking kudos in this house.


So imagine their complete and utter surprise when I put this Pumpkin dip with ginger snaps and apples on the counter one day followed with a  "Mom, did dad make that"?  Very funny kid, very funny.

Happy June. Hope you had a fabulous month. I am hoping that if it's anything like May, it won't fly by. Why do summer months have to do that anyways?
Did you notice my new header?  Ha. After 2 1/2 years of blogging, I finally came up with a tag line.  Live, Laugh & Decorate. I think it totally represents me and my blog. 




Earlier in the month I was out in the garden sharing my Wisteria Wreath. PS- My wisteria is still going gang busters out in the garden. I know many mentioned that they wish they had it, but it is so evasive.


Summer is in full swing ...well on the mantel it is at least. How about you...are you ready for summer? Some of you have asked about the buoys that I used. They are old wooden ones that had the original orange color on them, that belong to my husband's grandfather. 



 My lego anxiety has been cured with our new lego table that we put in the game room. I am thrilled that all the legos now can be found in one spot, but have you ever stepped on a lego with bare feet... boy it hurts!


I did a little baking and came up with this 'No Name' summer dessert. You guys rocked the suggestions and here's a few that you came up with......

Since summer started with the kiddos at home, the only time I can really sneek up to the Craft room without kids in tow, is at night.
Regardless, day or night....I love my new space.

My 'No Name' Summer Dessert

I am probably taking a huge risk today sharing this mouth watering, perfect on a summer day, crowd pleasing dessert.



The risk isn't in the level of difficultly. Or even the ingredients that went into it. Nope, that was easy......even for a non-cook like me.

Start with premade sugar cookies and mold them inside a mini muffin pan. Bake as directed.


Next, whip up some vanilla instant pudding. Set, cool and then scoop a tablespoon inside the cookie cups. No risk here.


Slice a banana and finish off with a dollop of whip cream. Refrigerate until ready to serve.


The risk you ask.....what to name this super easy, super delish dessert.
Believe me, I have tried. I actually served these for lunch with friends over the weekend and some ideas that were suggested....in between bites.... Sugar Cookie Cups, Vanilla Cookie Treats and The No Namer. We obviously didn't get far....but did manage to eat them all.


So tell me, what name would you give them?



PS- I made great use of the cake plate that I made here. My friends never knew it was a toothbrush holder.

Spring Tablescape....3 looks...1 plate

Nothing inspires me more this time of year then natures beauty and
a pretty Spring table....




My hidden passion ( shhhhh)  is creating pretty tables, my challenge is always using what I got and today I am sharing three different looks with one pretty pink plate.....perfect for Spring.

I picked up these floral plates at World Market a few months ago......  I think it was the color, since all my plates are white.



A walk in the garden to clip a bunch of azaleas to sit in a white tea cup and some pink spray paint on a plastic charger, and I created my first Spring tablescape.



It didn't take much more effort to create the second look, other then spraying some yellow spray paint on a glass vase and on a charger. 
I love how it pulls from the yellow flowers on the plate. The combination of pink and yellow is perfect.



The third look is a bit more calmer, with the plates sitting on a silver charger and the table flanked with mercury glass holders filled with the flowers.




Now, my other challenge is choosing which tablescape I will use....since I love them all.

A New Twist on PB & J

Don't tell my kids that while I am down in S.Florida for a few days this week, I am noshing on Peanut Butter and Jelly..... cupcakes. And since they aren't looking, I am calling it lunch.





Yup, cupcakes. Good ole peanut butter and jelly on a graham cracker crust, topped off with a glass of cold milk.
And boy are they yummy. 


At a barbecue on Sunday, my sister whipped up a batch of these crowd favorite cupcakes, and I just couldn't wait to share the recipe with you.

Peanut Butter and Jelly Cupcakes
1 package of cream cheese (8 oz)
1/3 cup peanut butter
1/2 cup confectioners sugar
1 tablespoon milk
1 1/4 graham cracker crumbs
3 tablespoons sugar
1/3 cup of butter
3/4 cup of preserves- your choice. We used strawberry
Cupcake liners

Crust
combine graham cracker crumbs and sugar in a bowl. Stir in butter and mix until thoroughly blended. Spoon a 'healthy' tablespoon into each cupcake liner. Press crumbs with a bottom of a cup to secure and set into place. Set aside crusts.

Peanut Butter Filling
Combine cream cheese and peanut butter in a large bowl and mix until well blended. Add sugar and milk. Mix thoroughly. Spoon peanut butter filling into graham cracker crusts, filling 3/4 full. Spread preserves on top of the cupcakes.
Refrigerate until ready to eat.


Who know's..... perhaps when I go home, I will conveniently forget the bread while shopping and whip up a batch of these for my kids instead..... when they want a PB&J sandwich. 



They are after all..... mom approved!

I am taking a few days to thoroughly enjoy my time with my family and friends in South. Florida.

Simple Holiday Breakfast Idea

Welcome to the Better Late Than Never Christmas Edition!



I am joining up with some blogging buddies today ( see schedule below) to bring you some last minute craft, decor and holiday food ideas in preparation for the big day. Which by the way is 12 days away! Who's ready? 




So, I absolutely love Christmas  time and everything about Christmas morning except having to be in the kitchen to prepare breakfast.  As you know from here, I am not much of a cook so I like uncomplicated, easy, and can do with my eyes closed kind of recipes. This one fits the requirements perfectly.


My Christmas beignets. I like to think of them as a 'hybrid beignet'. A beignet that you would find in the heart of the French Quarter in New Orleans, combines with a donut hole that you would find at the closest Dunkin Donuts down the road, with a sprinkle of  peppermint candy.



Grab a can of biscuits, some oil and powdered sugar. A can of 10 biscuits will yield 20 small beignets.

Step 1
Heat your oil. For a small pan I used 2 1/2 cups of cooking oil. The temperature setting should be between medium and high heat. I imagine you could also use a fryer for this. I don't have one....I don't cook.
Step 2
Open your biscuits. Tear apart 1 biscuit into 2 pieces. Flatten each piece in your hand into a circle shape. Drop pieces into your oil.
Step 3
Leave in oil mixture for just a minute or two on each side. You want them to be a golden brown color. If they brown too quickly  your oil temperature is too high and they will not be cooked inside. If they don't brown within 2 minutes, your oil temperature is too low.
Step 4
Remove from pan and place on a paper towel to absorb the oil.



Step 5
Move them to another plate or platter ( or remove the paper towel) and sprinkle a generous amount of powdered sugar on the top , works best if you use a sifter.



Step 6
Put them on the table and watch them disappear



I also love to serve them with some hot chocolate.....a family favorite recipe from my mother in-law.


So, I hope whether you're having a few of these Christmas beignets (okay, maybe more then a few) , or eating something else Christmas morning, that you enjoy and savory each magical moment.
